Leftover ham and fresh local asparagus makes for one yummy toddler friendly dinner! Definitely not a recipe for dieters. :)
Leftover ham-about 1 cup (diced)
2 cups whole wheat pasta
1/4 c butter (or margarine)
1/4 c flour
2 c milk (I used organic whole milk this time, normally I use 1% but we were out this time)
2c sharp grated cheese
1) Preheat oven to 350. Cook noodles according to the directions on the package.
2) Wash and break bottom ends off the asparagus. Chop into 1 inch pieces. Add to noodles and cook until tender then drain.
3) While noodles and asparagus are boiling away melt the butter in a saucepan over med-low heat. Once it is melted add flour stirring constantly until it is smooth and creamy. Stir in salt and pepper. Add milk. Stir constantly until it starts to bubble. Once bubbling starts continue to cook and stir for 1 minute. Remove from heat and stir in cheese.
4)Combine ham, noodle/asparagus mixture, and sauce in a casserole dish or oven safe bowl. Cook at 350 for 20 minutes.
